i found this out a few weeks ago because of my uncle...damn you guys make me wanna head out to costco right now to get some salmon and tuna.

i thought about using costco salmon but was too scared. When people say sushi grade I believe it has to do with FDA standards for the distribution, serving and consumption of raw fish not necessarily what a "sushi chef" decides is sushi grade. Salmon from Costco is for grilling or baking only.....if they are not well-cooked you'll probbly end up with parasite(sp?) They also have educational classes and programs.
